Serrano shoulder ham / Paleta Serrana
Made from the front leg of white pigs bred, raised and processed entirely in Spain, fed on grains and cereals.
Cured for around 10-12 months, it has a delicious full flavor and mild saltiness.
Shoulders are smaller than hams so it requires shorter time to cured (10-12 months for shoulder Vs 20-24 months for ham). This fact, summed to a lower yield, make shoulder have a lower price point compared to ham (rear leg).
